There’s so much more to a raw food diet than a bowl of vegetables! Raw foods are popular for a variety of reasons from health claims through to a reduced impact on the environment. There is a huge curiosity to the benefits and understanding “What does raw food mean?” This course provides an in-depth, and hands-on, introduction to preparing and eating raw food, with a focus on the history, uses, nutrition, health claims and the ethical and sustainable benefits. Explore the benefits of raw food in terms of nutrition and flavour development, and the enhancement of certain ingredients.  
  
Delve into the raw pantry and the methods of preparation that meet the low-heat threshold and enhance your knowledge and skills to confidently prepare raw food for yourself and others.
